This small batch of two barrels from the Chalong Bay distillery (610 bottles in total) is the second bottle in a collection of limited editions inspired by the Thai lunar calendar, called Lunar Series .
Each year is symbolized by an animal and 2023 is dedicated to the Rabbit ( Lunar Series #2 )
Distilled in Thailand then aged for 26 months in Ex-Shochu barrels (Kome Shochu) in Gers (France), this rum was bottled at its natural strength.
Aged in a barrel that contained a traditional Japanese alcohol, a Shochu made from rice.
Of remarkable voluptuousness and freshness, its aromatic and taste palette brilliantly restores the aromas and flavors of vesou of incredible purity. Crystalline and mineral, it also reveals itself as vanilla, tangy and freshly herbaceous.

Tasting notes
Nose : Both fresh and heady. Restoring succulent notes of vesou, the first nose is extremely fruity (pineapple, pear), lactic (almond, rice) and vegetal (sugar cane). Allowed to breathe, scents of tuberose, geranium and mustard seed gradually take over the olfactory space.
Mouth : Elegant, dynamic. The attack on the palate is subtly vanilla, lemony and herbaceous. Slender, the mid-palate pours freshly squeezed sugar cane juice onto the tongue. More consistent, the finish evokes fibrous and syrupy cane.
Finale : Long, full-bodied. Notes of vanilla, coconut milk and aromatic plants (rosemary sage) give way to sweet spices (cinnamon, grated ginger) and honeyed (agave) and gourmet flavors (rice pudding).
