In search of authenticity and natural purity, we produce this rum from the first press of a variety of Thai sugar cane and kaffir lime leaves, from small partner farms, grown without chemical fertilizers and pesticides, and harvested manually without burning.
The natural and complex Chalong Bay Combava character is the result of the rare method we employ - steam infusion. During our unique distillation, in a French Armagnac copper still, we pass the vapors of our nascent rum through perforated baskets containing the kaffir lime leaves carefully prepared by hand, thus extracting their flavors before the condensation process. Both exotic and subtle, Chalong Bay Combava is distinguished by its surprising notes of tropical fruits, rose and lychee.
